VICHYSSOISE

VICHYSSOISE (CREMA DE PUERROS)



INGREDIENTES (4 personas): 4 Puerros medianos, 600 ml de leche, 100 ml de nata (preferiblemente baja en grasa), 2 patatas medianas, 1 pastilla de caldo de verduras, sal y pimienta negra molida.


  • Quitamos la parte verde de los puerros, la raíz y la primera capa y los lavamos con agua fría. Una vez que tenemos la parte blanca de los puerros (es importante porque la parte verde del puerro da un sabor muy fuerte a las cremas) los cortamos en rodajas de unos 3cm de grosor y los echamos a una olla a presión.
  • Pelamos las patatas, las lavamos, las cortamos y las añadimos al puerro.
  • Cubrimos los puerros y las patatas con los 600 ml de leche y añadimos la pastilla de caldo de verduras y la sal al gusto.
  • Cerramos la olla express y lo cocemos a fuego fuerte. Cuando la olla haya alcanzado presión alta, bajamos el fuego al mínimo y se deja cocer durante 15 minutos.
  • Una vez abramos la olla debemos mezclarlo con la batidora eléctrica hasta que nos quede una crema muy fina (es aconsejable usar mucho la batidora con esta crema ya que el puerro puede dejar fibras incómodas al gusto).




  • Una vez tengamos la crema líquida añadimos los 100 ml de nata y una pizca de pimienta negra molida, y la dejamos enfriar en la nevera, al menos, 1 hora antes de servirla.

ACOMPAÑAMIENTOS: Se puede añadir a la crema unos croutons o crocanti de jamón serrano.

TRUCOS: Podemos hacer una crema con menos calorías sustituyendo los 100 ml de nata por leche.
Si nos quedara una crema muy espesa se puede rebajar con leche o nata.
También se puede cocinar en una cazuela tradicional. Se cuece a fuego fuerte y, una vez entre en ebullición, se cocina a fuego medio durante 30 minutos removiendo de vez en cuando.

HISTORIA: Este plato es de origen francés ya que es una variante de un plato tradicional francés, aunque algunos expertos aseguran que dicha variante nació en Estados Unidos a manos, eso sí, de un chef francés que trabajaba en el Ritz.







VICHYSSOISE (CREAM OF LEEK AND POTATO SOUP)




INGREDIENTS (4 Serves): 4 medium leeks, 600 ml of milk, 100 ml double cream or crème fraîche, (Prferably low fat), 2 medium potatoes, 1 vegetable stock cube,  salt and black ground pepper.


  • Remove the green part of  the leeks, root and the first layer and wash them with cold water. Once we have the white part of the leeks (this is important because the green part gives astrong flavour to creams) cut them into slices, about 3cm thick and put them into a pressure cooker.
  • Peel, wash and cut the potatoes. Then add them to the leeks.
  • Cover the leeks and potatoes with 600 ml of milk and add the vegetable stock cube and salt.
  • Close the pressure cooker and boil over high heat. When the pressure is high, lower the heat to low and cook for 15 minutes.
  • Once we open the pressure cooker we have to mix it with the blender until we obtain a very fine cream (it is advisable to use the blender for a long period of time in order to avoid the leek fibers, so uncomfortable to eat).

 


  • Once we have the cream we have to add 100 ml of double crean and a pinch of black ground pepper, and let cool the cream in the fridge one hour before serving.


SIDE DISHES: You can add croutons or spanish ham crocanti.

TIPS: We can make a cream with fewer calories by replacing the 100 ml of cream for milk.
If we obtain a very thick cream we can reduce the thickness with milk or cream.
You can also cook this dish in a traditional pot. Boil over high heat and, once boils, cook over medium heat for 30 minutes, stirring occasionally.

PLATE HISTORY: It has a French origin as it is a variant of a traditional French dish, but some experts say that this variant was born in USA, but from a French chef who worked at the Ritz Hotel.
