PATÉ DE PASAS Y ACEITUNAS
INGREDIENTES (4 tarrinas): 500gr de hígados de pollo, 150 ml de nata, 3 huevos, un chorrito de jerez, pimienta negra molida, 1 cebolla pequeña, 4 cucharaditas de pasas, 50 gramos de aceitunas, 1 cucharada de harina y sal.
- Limpiar los higaditos y reservar.
- Picar las aceitunas y reservar.
- Pelar la cebolla, cortarla y reservar.
- En una sartén echar un chorro de aceite y poner sobre fuego bajo, añadir la cebolla y cocinar hasta que esté transparente. Retirar del fuego, escurrir el aceite y reservar.
- En un vaso de batidora echar los higaditos, la cebolla, los huevos, la sal, la nata, el jerez, la cucharada de harina y la pimienta negra molida. Triturar hasta que quede una mezcla homogénea.
- Engrasar varias tarrinas (pueden ser moldes de flanes o de magdalenas) y echar la mezcla en ellas.
- Añadir las pasas y las aceitunas en cada tarrina.
- Poner estas tarrinas al baño maría (es decir, introducirlas en un recipiente más grande con agua), cubriendo las tarrinas más o menos a la mitad de su altura.
- Precalentar el horno a 150º durante 10 minutos. Introducir las tarrinas al baño maría durante 35 minutos.
- Dejar enfriar antes de servir.
ACOMPAÑAMIENTOS: Este plato se suele servir con pan tostado o crackers. También se puede servir junto a distintas mermeladas, preferiblemente de frutos rojos.
Otra opción es servirla con ensaladas.
TRUCOS: Para conseguir un paté más cremoso se ha de utilizar nata para postres en vez de nata para cocinar.
TIEMPO DE PREPARACIÓN: 50 minutos.
PATE WITH RAISINS AND OLIVES
INGREDIENTS (4 terrines): 500g of chicken livers, 150 ml of cream, 3 eggs, a dash of sherry, ground black pepper, 1 small onion, 4 teaspoons of raisins, 50 grams of olives, 1 tablespoon of wheat flour and salt.
- Clean the livers and set aside.
- Chop the olives and set aside.
- Peel the onion, cut it and set aside.
- In a frying pan pour a little oil and place it over low heat, add onion and cook until translucent. Remove from heat, drain the oil and set aside.
- In a blender cup put the livers, the onion, the eggs, 4 pinches of salt, the cream, the sherry, a tablespoon flour and ground black pepper. Grind until blended.
- Grease several tarrines (can be cupcakes or custard molds ) and pour the mixture into them.
Add raisins and olives in each mold.
- Put these tarrines in bain-marie (it is to say, introduce the tarrines into a larger recipient full of water) covering the tarrines at about half its height.
- Preheat oven to 150 º for 10 minutes. Bake the tarrines in bain-marie for 35 minutes.
- Let cool before serving.
SIDE DISHES: This dish is usually served with toast or crackers. Can also be served with various jams, preferably red fruit ones.
TIPS: For a creamier pate, use hole fat cream instead of cooking cream.
PREPARATION TIME: 50 minutes.
