CALAMARES EN SU TINTA



CALAMARES EN SU TINTA

Ingredientes (4 personas): 750 gr de calamares, 5 cucharadas soperas de tomate frito, 2 sobres de tinta de calamar, 3 hojas de laurel, perejil, 1 cucharada sopera de harina, 1/2 cebolla pequeña y aceite.

  • En una sartén grande poner 2 cucharadas soperas de aceite y poner sobre fuego medio. Añadir los calamares y saltearlos durante 3-5 minutos. Reservar en una cazuela grande.
  • Mezclar la tinta con 500 ml de agua fría  y reservar.
  • Pelar la cebolla y picarla. Ponerla sobre fuego medio en una sartén con 2 cucharadas soperas de aceite. Cuando la cebolla esté transparente añadir la harina y remover, sin retirar del fuego durante 2 minutos. Añadir la tinta de calamar y seguir removiendo hasta conseguir una mezcla homogénea. 
  • Poner sobre fuego medio la cazuela con los calamares, añadir la tinta de calamar (ya mezclada con la harina y la cebolla), el tomate y las hojas de laurel. Cocinar durante 20 minutos, o hasta que la salsa quede reducida. 


ACOMPAÑAMIENTOS: Este plato se puede servir con arroz. Se puede añadir huevo cocido picado a la hora de servir.


TRUCOS: Es aconsejable no añadirle sal. 
Se puede sustituir el calamar por sepia, que tiene menos impacto sobre el colesterol.


TIEMPO DE PREPARACIÓN: 45 minutos. 




SQUID IN INK

Ingredients (4 people): 750 grams of squid, five tablespoons of tomato sauce, 2 sachets of squid ink, 3 bay leaves, parsley, 1 tablespoon flour, 1/2 small onion and oil.

  • In a large frying pan put 2 tablespoons of oil and place it over medium heat. Add the squids and sauté for 3-5 minutes. Reserve in a large saucepan.
  • Mix the ink with 500 ml of cold water and set aside.
  • Peel the onion and chop. Put it on medium heat in a fryingpan with 2 tablespoons of oil.When the onions are transparent add the flour and stir, without removing from heat for 2 minutes. Add the squid ink and continue stirring until blended.
  • Put the saucepan over medium heat with the squid, add the squid ink (already mixed with flour and onions), tomato sauce and bay leaves. Cook for 20 minutes or until sauce is reduced.


SIDE DISHES: This dish can be served with rice. You can add chopped boiled egg at serving.


TIPS: Salt is not normaly needed.

Squid can be replaced by sepia squid, which has less impact on cholesterol.


PREPARATION TIME: 45 minutes.
