TORTILLA DE PATATAS (O ESPAÑOLA)

TORTILLA DE PATATA (O ESPAÑOLA)


INGREDIENTES (4 personas): 5 patatas grandes, 1/2 cebolla mediana, 6 huevos, aceite y sal.


  • Se pela le cebolla y se pica en pequeños trozos.
  • En una sartén de unos 22-28 cm de diámetro se pone una gran cantidad de aceite (la patata tendrá que quedar casi cubierta con el aceite) y se cocina la cebolla a fuego medio.
  • Se pelan las patatas, se cortan en rodajas muy finas y se salan.
  • Cuando la cebolla esté muy dorada se añade la patata y se sube el fuego.
  • A los cinco minutos de haber echado la patata bajamos el fuego a fuego medio y con una cuchara de madera vamos picando y moviendo la patata de vez en cuando (consejo que le debo a mi padre que hace unas tortillas de patata muy ricas. Gracias papá).
  • Cuando la patata está cocinada (justo antes de empezar a dorarse, suele tardar unos 20 minutos a fuego medio), se retira del fuego y se escurre el aceite.
  • En un bowl grande batimos los 6 huevos y le añadimos una pizca de sal por huevo (en este caso serían 6 pizcas de sal).
  • Echamos la patata escurrida en los huevos batidos y dejamos reposar 10 minutos.
  • Retiramos el aceite de la sartén que hemos usado para freir la cebolla y las patatas, y dejamos sólo una cucharada sopera de aceite.
  • Ponemos la sartén a fuego medio y, cuando esté caliente el aceite, echamos la mezcla de patata, cebolla y huevo sin dejar de mover la sartén para que no se pegue la mezcla.
  • Pasados 2 ó 3 minutos y con la ayuda de un plato llano le damos la vuelta a la tortilla y la dejamos al fuego otros 2 ó 3 minutos. Se retira de la sartén y está lista para servir.

ACOMPAÑAMIENTOS: Este plato puede servirse con mayonesa, con una ensalada, con tomate en aceite... Admite muchos acompañamientos.

TRUCOS: Cuanto más picada esté la patata, más jugosa saldrá la tortilla.
Se puede añadir a la mezcla de huevo batido y patata unos taquitos de chorizo para darle más sabor.
Si queremos que sea más ligera, se puede cambiar la mitad de las patatas por calabacines. En este caso, freiremos las patatas y, 5 minutos antes de retirarlas del fuego, añadiremos los calabacines cortados.

HISTORIA: Aunque la tortilla se conocía en Europa y América desde tiempos inmemoriales, y la patata llegó a lo que hoy es España a raíz del descubrimiento de América, cuenta la leyenda que fue un general carlista durante la guerra el que mezcló la tortilla de huevo con las patatas que tenían para elaborar un plato sencillo de realizar y nutritivo para sus tropas.




SPANISH OMELETTE



INGREDIENTS: 5 large potatoes, 1/2 medium onion, 6 eggs, oil and salt.


  • Peel the onion and chop it into small pieces.
  • In a skillet of 22-28 cm in diameter put a lot of oil (the potatoes should  be almost covered with this oil) and cook the onion over medium heat.
  • Peel the potatoes, cut them into thin slices and add salt.
  • When the onion is golden add the potatoes and increase the heat.
  • After five minutes cooking the potatoes low the heat to medium and, with a wooden spoon, chop the potato and stir ocasionally.
  • When the potato is cooked (just before get browned which takes about 20 minutes over medium heat) remove from heat and drain the oil.
  • In a large bowl whisk the eggs and add a pinch of salt per egg (in this case would be 6 pinches of salt).
  • Add to the beaten eggs the drained potatoes and let stand for 10 minutes.
  • Remove the oil from the skillet we have used for frying the potatoes leaving one tablespoon of oil.
  • Put the skillet over medium heat and when the oil is hot pour the misture of potato, onion and beaten eggs stirring the skillet to prevent sticking the mixture.
  • After 2 or 3 minutes, with the help of a flat plate, flip the omelette and let it cook for another 2 or 3 minutes. Then remove and it is ready for serving. 

SIDE DISHES: This dish can be served with mayonnaise, with a fresh salad or a tomato salad... This dish supports many side dishes.

TIPS: The more you chop the potato the juicier will be the omelette.
In order to add flavour you can add small pieces of spanish red sausage to the mixture of potatoes and beaten eggs.
If we want to cook a lighter omelette, we can change half of the potatoes for zucchini. In this case, fry firstly the potatoes and, five minutes before get browned, add the slices of zucchini.

PLATE HISTORY: Altough omelette was known in Europe and America since ancient times, and the potato had arrived to Europe when America was discovered, according to legend was a Carlist general during the war who mixed for the first time the beaten eggs with the potatoes they had to prepare a quick, simple and nutritive plate for his troops.

SOLOMILLOS AL JEREZ DULCE

SOLOMILLOS  AL JEREZ DULCE

INGREDIENTES (4 personas): 2 Solomillos de cerdo (o cinco medallones por persona), 4 cucharaditas de pasas de corinto, una pastilla de caldo de cocido, 125 ml de jerez dulce, 1 cebolla grande, 2 cucharadas soperas de harina de trigo, aceite, pimienta y sal.

  • Se cortan los solomillos en filetes, se salpimentan y se ponen en una sartén a fuego fuerte con poco aceite (1 ó 2 cucharadas soperas de aceite son suficientes). Se doran por los dos lados y se reservan.
  • En la sartén todavía caliente, donde hemos dorado los solomillos, echamos los 125 ml de jerez y dejamos que repose 5 minutos con el fuego apagado.
  • En un cazo se pone 1 litro de agua, se añade la pastilla de caldo de cocido y se lleva a ebullición. Una vez haya hervido, se apaga el fuego y se reserva.
  • Se pela la cebolla y se corta en rodajas finas. En una cazuela grande se echa un chorro de aceite de oliva y, a fuego muy bajo, se añade la cebolla y se pocha (la cebolla tiene que cocer a fuego lento y quedarse transparente).
  • Cuando la cebolla está pochada, se añaden las 2 cucharadas de harina, se remueve bien con una cuchara de madera durante un minuto, y se añade el jerez dulce sin parar de remover. El jerez espesará y, sin dejar de mover, añadimos el litro de caldo de cocido.
  • Se sube el fuego a fuego fuerte y dejamos que cueza durante 15 minutos. En este momento con una batidora de mano, pasamos la salsa hasta conseguir que no queden grumos.
  • Un vez batida la salsa, se añaden los solomillos y las pasas, y se deja cocer a fuego fuerte hasta que la salsa haya adquirido la textura deseada.

ACOMPAÑAMIENTOS: Este plato se puede servir con patatas fritas, puré de patatas o arroz rehogado con ajo y perejil.

TRUCOS: Para que la salsa sea más cremosa se puede añadir 50 ml de nata.
Si nos sobra salsa se puede congelar y aprovecharla para acompañar otras carnes.
En la receta original la cebolla no se tritura, se carameliza.

PORK TENDERLOINS WITH SWEET SHERRY



INGREDIENTES (4 serves): 2 pork tenderloins (or 5 tenderloins steaks per person), 4 teaspoon of currants, 1 cooked broth  cube, 125 ml of sweet sherry, 1 large onion, 2 tablespoon of flour, oil, black ground pepper and salt.


  • Cut the tenderloins into steaks and add salt and pepper. Put them into a skillet over high heat with a little oil (1 or 2 tablespoons are enough). Fry them on both sides and set aside.
  • In the skillet (still warm) where we cooked the tenderloins add the sweet sherry and let stand for 5 minutes with the heat off.
  • Put one liter of water in a saucepan and add one cooked broth cube and boil. Once boiled, turn off the heat and set aside.
  • Peel the onion and cut it into thin slices. In a large saucepan is poured a stream of olive oil, over low heat and is added the onion. We cook it until get the onion transparent.
  • When the onion is satuéed add the 2 tablespoons of flour, stir well with a wooden spoon for a minute and then add the sherry, stirring constantly. This mix will get thicker quickly and, still stirring, we have to add the 1 liter of cooked broth.
  • Increase the heat to medium heat and cook it for 15 minutes stirring occasionally. When the time is over put the mixture into a blender and mix it until get a smooth sauce.
  • Put again the sauce into the saucepan, add the tenderloins and the currants and cook it over high heat until the sauce is as smooth as we like.

SIDE DISHES: This dish can be served with fries, mashed potatoes or rice satuéed with garlic and parsley.

TIPS: To make the sauce creamer you can add 50 ml of double cream.
If we cook a lot of sauce, we can freeze it and use it other day with other meats.
In the original recipe, the onion is not crushed but caramelized.

BIZCOCHO DE FRESAS NATURALES

BIZCOCHO DE FRESAS NATURALES


INGREDIENTES: 4 huevos, 220gr de azúcar, 250 gr de harina de trigo, 16 gr de levadura en polvo, 50 gr de yogur natural, 250 gr de fresas y 50 gr de aceite de oliva (también puede ser de girasol). 


  • Se lavan las fresas, se les quita la parte verde, se echan en una batidora de vaso y se trituran. Se reserva.
  • En un bowl se echan los 4 huevos y el azúcar y se bate (con batidora de varilla)  hasta que la mezcla sea homogénea.
  • Se añade el aceite, el yogur, 100 gr del zumo de fresas y se sigue batiendo.
  • Se añade a la  mezcla la harina con la levadura y se sigue batiendo.
  • Se echa la mezcla en un molde de horno previamente engrasado con margarina o mantequilla.
  • Con cuidado se añade a la mezcla del molde el resto de zumo de fresas.
  • Se introduce el molde en el horno (previamente calentado durante 10 minutos a 200º) y se hornea durante 45 minutos (es importante no abrir el horno hasta este momento para que no se baje el bizcocho).
  • Si a los 45 minutos no está el bizcocho terminado (se comprueba metiendo un cuchillo, si sale limpio el bizcocho está hecho. Si sale manchado todavía le queda tiempo en el horno), cubrir el molde con papel de plata y volver a introducirlo en el horno el tiempo que sea necesario.

ACOMPAÑAMIENTOS: Se puede servir con una fina salsa de chocolate, con nata montada o con salsa de yogur.

TRUCOS: Cuando haya que añadir la harina es mejor tamizarla, que consiste en poner la harina en un colador e ir dándole pequeños golpes para que caiga la harina hecha polvo.

HISTORIA: No he encontrado la historia de este plato, pero me gustaría agradecerle a Vanesa Sierra la publicación de esta receta. Yo he modificado un par de puntos de la receta que ella ha publicado en su magnífico blog:  Mis deseos más dulces.




NATURAL STRAWBERRY CAKE

INGREDIENTS: 4 eggs, 220 gr of sugar, 250 gr of wheat flavour, 16 gr of baking powder, 50 gr of yogurt, 250 gr of strawberries and 50 gr of olive oil (can also be vegetable oil).

  • Wash the strawberries, remove the green part. Blend them in a blender and reserve.
  • Put in a bowl the eggs and the sugar and beat (with a hand blender) until the mixture is homogenoeus.
  • Add the oil, the yogurt and 100 gr of  strawberry juice and continue beating.
  • Add the flour with the baking powder and continue beating.
  • Put the mix into a greased (with margarine or butter) baking pan.
  • Add carefully the rest of the strawberry juice.
  • Introduce the baking pan into the oven (preheated for 10 minutes at 200 degrees) and bake for 45 minutes (It's important not to open the oven until the time is over as not to lower the cake).
  • If the cake is not baked when the time is over (check it by inserting a knife, if it comes out clean the cake is done. If the knife comes out spotted, the cake needs more time in the oven), then cover the cake with foil and return the cake to the oven as long as necessary.

SIDE DISHES: Serve with a thin chocolate sauce, whipped cream or yogurt sauce.

TIPS: When you add the flour is better to sift it, it is to say to put the flour in a sieve and, by giving taps, bring down the powdered flour.

PECHUGAS CON CARAMELO DE LIMÓN

PECHUGAS REBOZADAS CON CARAMELO DE LIMÓN


INGREDIENTES (4 personas): 4 filetes de pechuga de pollo o pavo, 1 huevo, 2 limones, 5 cucharadas soperas de azúcar, 1 cucharada pequeña de maicena, pan rallado, 750 ml de agua, aceite y sal.


  • Se bate el huevo en un plato hondo y se le echa una pizca de sal.
  • Se pone el pan rallado en un plato llano.
  • Se salan las pechugas y, una a una, se pasan primero por el huevo batido e, inmediatamente, por el pan rallado.
  • Se calienta aceite en una sartén (como para cubrir la mitad de la pechuga). Cuando el aceite esté caliente se echan las pechugas, se doran y se reservan.
  • Se hace el zumo de los dos limones y se le echan las 5 cucharadas soperas de azúcar. A esta mezcla se le añade 750 ml de agua y la cucharada de maicena. Se mezcla bien (con una cuchara) y se pone a cocer en una sartén a fuego alto para que reduzca la salsa.
  • Cuando la mezcla haya reducido más de la mitad, se le añaden las pechugas (el pan rallado hará que la mezcla espese más) y se deja cocer hasta que la salsa adquiera un tono dorado.

ACOMPAÑANTES: Este plato se puede acompañar con arroz rehogado, patatas fritas o puré de patata.

TRUCOS: Cuando echamos el agua a la mezcla del limón con azúcar hay que probarlo, si está muy ácido, hay que echarle un poco más de azúcar.
Si nos quedamos con poco huevo en el momento de rebozar las pechugas se puede echar un poco de leche al huevo batido, en vez de añadir otro huevo.

HISTORIA DEL PLATO: No he encontrado la historia de este plato.






BREADED CHICKEN BREAST WITH CARAMELIZED LEMON SAUCE


 INGREDIENTS (4 Serves): 4 slices of chicken or turkey breast, 1 egg, 2 lemons, 5 tablespoons of sugar, 1 teaspoon of cornstarch, breadcrumbs, 750 ml of water, oil and salt.


  • Beat the egg in a bowl and add a pinch of salt.
  • Put the breadcrums in a shallow plate.
  • Add salt to the chicken breast and, one by one, coat them with the beaten egg, and immediately, coat them with the breadcrums.
  • Heat oil in a frying pan (enought to cover half of the steak). When the oil is hot, add the breast,  fry them until golden brown and reserve.
  • Make juice of two lemons and add 5 tablespoons of sugar, 750 ml of water, 1 teaspoon of cornstarch.  Mix well (with a spoon) and put to cook in a frying pan (or in a casserole) over high heat to reduce sauce.
  • When the sauce is reduced to less than half, add the breaded chicken breast (breadcrumbs will thick more the sauce) and cook until the sauce turns to golden brown.

SIDE DISHES: This dish can be served with braised rice, french fries or mashed potatoes.

TIPS: When we have the mixture of lemon, water and sugar, we must taste it. If it is too acid, we can add more sugar.
If we don't have enough egg to coat all the chicken breast we can add milk to the beaten egg instead of adding another egg.

PURÉ DE CALABACÍN

PURÉ DE CALABACÍN

INGREDIENTES (4 personas): 3 calabacines grandes, 2 patatas medianas, 4 hojas de lechuga, 1 quesito, 50 ml de nata líquida, agua y sal.


  • Pelamos los calabacines, los cortarmos en rodajas y los  reservamos.
  • Pelamos las patatas, las cortamos en rodajas y las reservamos.
  • Lavamos las hojas de lechuga y las reservamos. 
  • Ponemos en una olla express los calabacines, las patatas las hojas de lechuga, la sal y el quesito. Echamos agua en la olla cubriendo sólo hasta la mitad los ingredientes. 
  • Cerramos la olla express y lo cocemos a fuego fuerte. Cuando la olla haya alcanzado presión alta, bajamos el fuego al mínimo y se deja cocer durante 15 minutos.
  • Una vez abramos la olla debemos mezclarlo con la batidora eléctrica hasta que nos quede una crema muy fina y añadimos los 50 ml de nata líquida.

ACOMPAÑAMIENTOS: Una vez servido en cada plato se puede añadir pequeños croutons de pan.
También se puede añadir como topping  gambas a la plancha peladas y troceadas.

TRUCOS: Si hay mucha agua al abrir la olla, se puede retirar y reservar antes de usar la batidora. Si el puré queda muy espeso se vuelve a añadir el caldo retirado.
Si se quiere añadir proteinas a este plato se puede cocer con leche en vez de agua.
Si el puré queda muy espeso, se puede rebajar con leche.

HISTORIA: No he encontrado historia referente a este plato.





ZUCCHINI PURÉE

INGREDIENTS: 3 large Zucchini (courgette), 2 medium potatoes, 4 leaves of lettuce, one little portion of creamy cheese, 50 ml double cream or crème fraîche, salt and water.


  • Peel the zucchini, cut into slices and set aside.
  • Peel the potatoes, cut into slices and set aside.
  •  Wash the lettuce leaves and set aside.
  • Put in a pressure cooker the zucchini slices, the potatoes slices, the lettuce leaves, the cheese portion and salt.
  • Pour water into the pressure cooker and cover only half the ingredients.
  • Close the pressure cooker and boil over hight heat. When the pressure cooker reaches high pressure, lower the heat to low and cook for 15 minutes.
  • Once we open the pressure cooker we have to mix it with the blender until we obtain a very fine cream. Finally, we add 50 ml of double cream.

SIDE DISHES: Once served on a plate we can add small croutons of bread.
We can also add as topping grilled shrimp, peeled and chopped.

TIPS: If there is too much water when you open the pressure cooker you can remove some and reserve it before using the blender. If the purée is too thick, add it again.
If you want to add protein to this dish, it can be cooked with milk instead of water.
If the purée is too thick it can be lowered with milk.

PIMIENTOS RELLENOS DE ATÚN

PIMIENTOS RELLENOS DE ATÚN



Ingredientes (4 personas): 14 pimientos rojos de piquillo asados (2 latas de pimientos), 2 huevos, 3 latas de atún y  1 litro de bechamel.


  • Se cuecen los huevos hasta conseguir huevos duros. Se pelan  y se reservan.
  • Se abren las latas de pimientos y se reservan dos a parte, el resto se van colocando en una fuente apta para el horno.
  • Se le añade a la bechamel los dos pimientos reservados y se tritura con la batidora. De esta manera la bechamel adquirirá un bonito color rosado.
  • En una batidora de vaso, o bowl, se ponen los huevos duros, el bonito escurrido y cuatro cucharadas soperas de bechamel (ya triturada con los pimientos) y se tritura hasta conseguir una mezcla homogénea.
  • Se rellenan los pimientos con la mezcla de huevos, bonito y bechamel.
  • Se cubren los pimientos con la bechamel.
  • Se precalienta el horno durante 10 minutos a 180 grados. Una vez precalentado se introducen los pimientos durante 15 minutos.

ACOMPAÑAMIENTOS:  Este plato se recomienda comerlo sin acompañamiento, eso sí, combina muy bien con un vino blanco fresquito.

TRUCOS: Si se quiere hacer un plato con menos calorías, en vez de bechamel se puede usar velouté de verduras.
Se puede añadir al plato un poco de queso rallado por encima antes de hornearlo.

HISTORIA: Este plato tiene su origen en el norte de España, dada su tradición pesquera. Este plato tiene múltiples variantes ya que se puede rellenar de bacalao, arroz, etc.





SWEET RED PEPPERS STUFFED WITH TUNA

INGREDIENTES (4 serves): 14 roasted sweet red peppers (2 cans of peppers), 3 cans of tuna and 1 l of bechamel.


  • Cook the eggs until hard boiled eggs. Peel them and set aside.
  • Open the can of peppers and reserve two of them, put the rest of the peppers in a suitable recipient for the oven.
  •  Put in a blender the bechamel and two peppers and mix them until get a nice  pink mixture.  Reserve it.
  • Put in a blender the hard boiled eggs, the drained tuna and 4 tablespoons of  bechamel (which is already mixed with the 2 red peppers) and mixt it into a homogeneous mixture.
  • Stuff the peppers with the mixture of eggs, tuna and bechamel.
  • Cover the stuffed peppers with the bechamel.
  • Preheat the oven for 10 minutes at 180º, then bake the peppers for 15 minutes.

SIDE DISHES: I recommend to eat this dish without side dishes, but with a fresh white wine.

TIPS: If you want to make a dish with less calories you can use vegetable velouté instead of bechamel.
You can also add grated cheese before bake it.

HISTORY: This is a typical dish from the north of Spain, given its fishing tradition. This dish has many variation such as red peppers stuffed with bacalao, rice, etc.

SALMOREJO

SALMOREJO



INGREDIENTES (4 personas): 5 tomates grandes (preferiblemente tomate en rama), un tercio de barra de pan, un vaso pequeño de aceite de oliva (200 ml), una cucharada pequeña de vinagre de jerez, dos lonchas de jamón serrano, un diente de ajo y sal.


  • Se pelan los tomates, se parten en trozos y se reservan.
  • Se corta el pan en pedazos y se reserva.
  • Se pica el jamón y se reserva.
  • Cocer el huevo hasta conseguir huevo duro, se pela, se separa la yema del huevo, se pica la clara y se reserva.
  • Se pela el ajo y se elimina la raíz que va por el centro del mismo (la parte más dura del ajo que está por dentro de arriba a abajo). El resto del ajo se reserva.
  • En una batidora (de vaso mejor, si no es posible, se junta todo en un bowl y se utiliza la batidora de mano) se pone el tomate picado, los pedazos de pan, el aceite, el vinagre, el ajo y la sal y se bate hasta que quede una mezcla homogénea.
  • Se enfría en la nevera durante, al menos, una hora, y se sirve con el picadillo de jamón y huevo duro por encima.

ACOMPAÑAMIENTOS: Este plato combina a la perfección con berenjena rebozada.

TRUCOS: Si el salmorejo queda muy espeso se puede rebajar con agua o hielos.
En el momento de servir se le puede añadir también cebolla picada muy frita (¡¡gracias Vanesa por la idea!!).
También se puede usar de salsa (en pizzas, por ejemplo). El pescado al horno con salmorejo es excepcional.

HISTORIA: Este plato tiene su origen en la ciudad andaluza de Córdoba. Parece ser que esta mezcla se elaboraba desde tiempos remotos como acompañamiento y se hacía sin tomate. Durante el siglo XIX se le empieza a añadir el tomate para darle color a la mezcla.






SALMOREJO (BREAD AND TOMATO CREAM)


INGREDIENTS: 5 large tomatoes (preferably vine tomato kind), a third of a loaf of bread (bagguette kind), a small glass of olive oil (200 ml), a teaspoon of sherry vinegar, two slices of spanish ham, a clove of garlic and salt.


  • Cut the tomatoes, cut into pieces and set aside.
  •  Cut the bread into pieces and set aside.
  • Chop the ham and set aside.
  • Cook the egg until hard boiled egg, peel it, separate the egg yolk, chop the egg white and set aside.
  • Peel the garlic and remove the inside stem (the hardest part of the clove of garlic which runs from top to bottom) and reserve the rest of the clove.
  • Put in a blender (it's also possible with a bowl and a hand blender) the tomatoes, the pieces of bread, the oil, the vinegar, the garlic and salt, and mix them all until get a homogenous cream.
  • Cool in the refrigerator, at least, for an hour, and serve it with the chopped egg and ham as topping.

SIDE DISHES: This dish combines perfectly with eggplants coated in egg and breadcrums.

TIPS: If the salmorejo is too thick we can add water or ice.
At serving time you can also add fried onion finely chopped as topping. (Vanesa, thanks for the idea!!!)
Salmorejo can be also used as a sauce (with pizzas, for example). Baked fish with salmorejo is delicious.
PLATE HISTORY: This dish was born in the Andalusian city of Córdoba, Spain. Apparently this mixture was produced since ancient times as a side dish and was cooked without tomato. During the nineteenth century tomato was added to the recipe to add color to the mixture.

VICHYSSOISE (CREMA DE PUERROS)



INGREDIENTES (4 personas): 4 Puerros medianos, 600 ml de leche, 100 ml de nata (preferiblemente baja en grasa), 2 patatas medianas, 1 pastilla de caldo de verduras, sal y pimienta negra molida.


  • Quitamos la parte verde de los puerros, la raíz y la primera capa y los lavamos con agua fría. Una vez que tenemos la parte blanca de los puerros (es importante porque la parte verde del puerro da un sabor muy fuerte a las cremas) los cortamos en rodajas de unos 3cm de grosor y los echamos a una olla a presión.
  • Pelamos las patatas, las lavamos, las cortamos y las añadimos al puerro.
  • Cubrimos los puerros y las patatas con los 600 ml de leche y añadimos la pastilla de caldo de verduras y la sal al gusto.
  • Cerramos la olla express y lo cocemos a fuego fuerte. Cuando la olla haya alcanzado presión alta, bajamos el fuego al mínimo y se deja cocer durante 15 minutos.
  • Una vez abramos la olla debemos mezclarlo con la batidora eléctrica hasta que nos quede una crema muy fina (es aconsejable usar mucho la batidora con esta crema ya que el puerro puede dejar fibras incómodas al gusto).




  • Una vez tengamos la crema líquida añadimos los 100 ml de nata y una pizca de pimienta negra molida, y la dejamos enfriar en la nevera, al menos, 1 hora antes de servirla.

ACOMPAÑAMIENTOS: Se puede añadir a la crema unos croutons o crocanti de jamón serrano.

TRUCOS: Podemos hacer una crema con menos calorías sustituyendo los 100 ml de nata por leche.
Si nos quedara una crema muy espesa se puede rebajar con leche o nata.
También se puede cocinar en una cazuela tradicional. Se cuece a fuego fuerte y, una vez entre en ebullición, se cocina a fuego medio durante 30 minutos removiendo de vez en cuando.

HISTORIA: Este plato es de origen francés ya que es una variante de un plato tradicional francés, aunque algunos expertos aseguran que dicha variante nació en Estados Unidos a manos, eso sí, de un chef francés que trabajaba en el Ritz.







VICHYSSOISE (CREAM OF LEEK AND POTATO SOUP)




INGREDIENTS (4 Serves): 4 medium leeks, 600 ml of milk, 100 ml double cream or crème fraîche, (Prferably low fat), 2 medium potatoes, 1 vegetable stock cube,  salt and black ground pepper.


  • Remove the green part of  the leeks, root and the first layer and wash them with cold water. Once we have the white part of the leeks (this is important because the green part gives astrong flavour to creams) cut them into slices, about 3cm thick and put them into a pressure cooker.
  • Peel, wash and cut the potatoes. Then add them to the leeks.
  • Cover the leeks and potatoes with 600 ml of milk and add the vegetable stock cube and salt.
  • Close the pressure cooker and boil over high heat. When the pressure is high, lower the heat to low and cook for 15 minutes.
  • Once we open the pressure cooker we have to mix it with the blender until we obtain a very fine cream (it is advisable to use the blender for a long period of time in order to avoid the leek fibers, so uncomfortable to eat).

 


  • Once we have the cream we have to add 100 ml of double crean and a pinch of black ground pepper, and let cool the cream in the fridge one hour before serving.


SIDE DISHES: You can add croutons or spanish ham crocanti.

TIPS: We can make a cream with fewer calories by replacing the 100 ml of cream for milk.
If we obtain a very thick cream we can reduce the thickness with milk or cream.
You can also cook this dish in a traditional pot. Boil over high heat and, once boils, cook over medium heat for 30 minutes, stirring occasionally.

PLATE HISTORY: It has a French origin as it is a variant of a traditional French dish, but some experts say that this variant was born in USA, but from a French chef who worked at the Ritz Hotel.
