GOULASH
INGREDIENTES (4 personas): 500 gr de carne de ternera para guisar, 1 cebolla mediana, 400 gr de tomate, 4 cucharaditas de pimentón de la vera, 4 cucharadas de aceite de oliva, 1 pastilla de caldo de carne, 200 ml de vino tinto, 100 ml de nata, 2 cucharaditas de zumo de limón, pimienta molida, aceite y sal.
- Pelar y picar la cebolla. Reservar.
- Pelar y cortar los tomates. Reservar.
- Cortar la carne en trozos y echarle sal y pimienta negra. Reservar.
- En una cazuela se pone un litro de agua, la pastilla de caldo de carne y se pone a fuego alto. Cuando hierva se retira del fuego y se reserva.
- En una sartén se echa una cucharada sopera de aceite y se pone sobre fuego alto. Cuando el aceite esté caliente se añade la carne y se cocina hasta que esté dorada por ambos lados. Se retira del fuego y se reserva.
- En la misma sartén se echa la cebolla y el tomate y se sofríe a fuego lento. Cuando los ingredientes estén cocinados, se añade el pimentón y el vino tinto y se cuece a fuego medio.
- Cuando el alcohol se haya evaporado, se echa el caldo de carne y se cocina durante 10-15 minutos. De vez en cuando hay que retirar la espuma que se vaya formando en la superficie.
- Con una batidora de mano se tritura la salsa y se añade la carne. Se tapa la sartén y se cocina durante 20 minutos a fuego lento. Remover de vez en cuando.
- Se añade la nata y el zumo de limón y se cocina durante 2 minutos.
ACOMPAÑAMIENTOS: Este plato se puede servir con patata asada, frita o con puré de patata. También se puede servir con arroz rehogado o setas.
TRUCOS: Se puede adornar con perejil picado.
En el momento de servir, se puede echar un chorrito de nata en cada plato.
Se le pueden añadir pasas y/o ciruelas.
TIEMPO DE PREPARACIÓN: 1 hora.

INGREDIENTS (4 Serves): 500 g stewing beef, 1 medium onion, 400 gr of tomato, 4 teaspoons of sweet paprika, 4 tablespoons of olive oil, 1 beef bouillon cube, 200 ml of red wine, 100 ml of cream, 2 teaspoons of lemon juice, black ground pepper, oil and salt.
- Peel and chop the onion. Set aside.
- Peel and chop the tomatoes. Set aside.
- Cut the meat into pieces and add salt and black pepper. Set aside.
- In a pan put a liter of water, the beef bouillon cube and place it over high heat. When boiling remove from heat and set aside.
- In a big frying pan pour a tablespoon of oil and place it over high heat. When the oil is hot, add the meat and cook until browned on both sides. Remove from heat and set aside.
- In the same frying pan, put the onion and the tomato and cook over low heat. When the ingredients are cooked, add the paprika, stir for a while and add the red wine. Cook over medium heat.
- When the alcohol has evaporated, pour the beef broth and cook for 10-15 minutes. Occasionally it is necessary to remove the foam formed on the surface.
- With a hand blender grind the sauce and add the meat. Cover the pan and cook for 20 minutes over low heat. Stir occasionally.
- Add the cream and the lemon juice and cook for 2 minutes.
SIDE DISHES: This dish can be served with baked potato, french fries or mashed potatoes. Can also be served with steamed rice or chanterelles.
TIPS: You can garnish with chopped parsley.
At serving time, you can pour a dash of cream on each plate.
You can add raisins and/or prunes.
PREPARATION TIME: 1 hour.
