PAELLA DE MARISCO
INGREDIENTES (4 personas): 400 gr de arroz, 2 pimientos verdes, 2 pimientos rojos, 24 gambas, 250 gr de mejillones, 250 gr de almejas, 2 calamares medianos, 250 gr de tomate frito, colorante alimentario, aceite y sal.
- Cortar los pimientos, quitarles el rabo y las pepitas, echarles sal y reservar.
- Pelar las gambas y reservarlas. Reservar también las cáscaras.
- Lavar los calamares, quitarles la parte interior, cortarlos en pequeños trozos y reservar.
- Cocer las almejas y los mejillones en un cazo con agua. Cuando estén abiertas, retirar del fuego, escurrir y reservar.
- En un cazo echar las cáscaras de las gambas, cubrir con 2 litros de agua y poner sobre fuego fuerte. Cuando hierva, dejar cocer durante cinco minutos y retirar del fuego. Triturar con la batidora eléctrica, colar el caldo con un colador y reservar.
- En una paella (o sartén grande) poner una cucharada sopera de aceite y poner sobre fuego medio. Cuando el aceite esté caliente echar las tiras de pimiento y remover de vez en cuando. Cocinar durante 10-15.
- Cuando el pimiento está frito se añade el calamar, las gambas, las almejas y se cubre con el tomate frito. Se cocina, removiendo de vez en cuando, durante 5-10 minutos.
- Se añade el arroz, la sal, el colorante y el caldo. Sin remover se cocina 10 minutos a fuego fuerte y otros 10 minutos a fuego medio.
- Se apaga el fuego, se tapa con un trapo limpio y se deja reposar 5 minutos. Se le añaden los mejillones y se sirve inmediatamente.
ACOMPAÑAMIENTOS: Este plato se suele acompañar de ensalada de lechuga y tomate.
También se puede servir con limones partidos por la mitad.
TRUCOS: El caldo se puede ir añadiendo poco a poco en vez de una sola vez.
Se le puede añadir corazones de alcachofas cocidas.
También se puede añadir con el caldo unas hebras de azafrán.
TIEMPO DE PREPARACIÓN: 1 hora 15 minutos
SEAFOOD PAELLA
INGREDIENTES (4 serves): 400 g of rice, 2 green peppers, 2 red peppers, 24 shrimps, 250gr of mussels , 350 gr of clams, 2 medium squids, 250g of tomato sauce, food coloring, oil and salt.
- Cut the peppers, remove the tail and the seeds, add salt and set aside.
- Peel the prawns and set aside. Set aside also the prawn shells.
- Wash the squid, remove the inside parts, cut them into small pieces and set aside.
- Cook the clams and mussels in a saucepan with water. When open, remove from heat, drain and set aside.
- In a saucepan put the shrimp shells, cover them with 2 liters of water and place over high heat. When boiling, cook for five minutes and remove from heat. Blend with an electric mixer, strain the broth through a sieve and set aside.
- In a paella (or large frying pan) add a tablespoon of oil and place it over medium heat. When the oil is hot add the pepper strips and stir occasionally. Cook for 10-15.
- When the pepper is fried add the squid, the prawns, the clams and cover all the ingredients with the tomato sauce. Cooked, stirring occasionally, for 5-10 minutes.
- Add the rice, the salt, the colorant and the broth. Without removing, cook firstly over high heat 10 minutes and then, another 10 minutes over medium heat.
- Turn off the heat, cover the frying pan with a clean dishtowel and let stand for 5 minutes. Then add the mussels and serve immediately.
SIDE DISHES: This dish is usually served with a lettuce and tomato salad.
You can also serve it with halved lemons.
TIPS: The broth may be added gradually rather than at once.
You can add boiled artichoke hearts.
You can add also a pinch of saffron.
PREPARATION TIME: 1 hour and 15 minutes.
