EMPANADILLAS CHINAS



EMPANADILLAS CHINAS

INGREDIENTES (4 personas): Para las empanadillas, 200 gr de harina de trigo, 1/2 cucharadita de sal, 90 ml de agua. Para el relleno, 300 gramos de carne picada, 200 gramos de puerro, 1 cucharadita de jengibre rallado, 4 cucharadas de caldo de carne, 2 cucharadas de salsa de soja, aceite y sal.



  • Poner en un bowl la harina, la 1/2 cucharadita de sal y el agua y mezclar con una varilla. Cuando la masa comience a formar grumos amasar con las manos sobre una encimera limpia hasta conseguir una masa lisa y compacta.
  • Mojar un paño limpio, escurrirlo y envolver la masa con él. Dejar reposar en un bowl limpio durante 30 minutos a temperatura ambiente.
  • Formar con la masa un cilindro de unos 3 centímetros de diámetro. Cortar la masa en rodajas con un cuchillo de unos dos centímetros de ancho.
  • Espolvorear harina sobre una superficie lisa y limpia y extender cada porción de masa con un rodillo. Espolvorear harina sobre cada oblea para evitar que se peguen.
  • Lavar el puerro, picarlo y reservar.
  • En un  bowl poner la carne picada, el jengibre, el puerro, 2 cucharadas de aceite, la sal y la salsa de soja. Mezclar bien los ingredientes y rellenar con ellos las obleas.
  • Llenar una cazuela grande de agua y ponerla sobre fuego fuerte. Cuando hierva, añadir las empanadillas una a una con cuidado y cocer hasta que el agua vuelva a hervir. Cuando las empanadillas empiecen a flotar, bajar el fuego a fuego medio y cocinar durante 7 minutos. Sacar las empanadillas con una espumadera y servir inmediatamente.


ACOMPAÑAMIENTOS: Este plato se suele servir con una salsa hecha a base de soja y vinagre de arroz.
También se pueden acompañar de salsa agridulce.


TRUCOS: Se puede usar jengibre en polvo en vez de jengibre fresco.


TIEMPO DE PREPARACIÓN: 1 hora.





CHINESE DUMPLINGS

INGREDIENTS (4 serves):  For the dumplings, 200 grams of wheat flour, 1/2 teaspoon of salt, 90 ml of water. For the filling, 300 grams of minced meat, 200 grams of leek, 1 teaspoon of  grated ginger, 4 tablespoons of beef broth, 2 tablespoons of soy sauce, oil and salt.

  • Put in a bowl the flour, 1/2 teaspoon of  salt and water and mix with a whisk. When the dough begins to clump knead with your hands on a clean countertop until dough is smooth and compact.
  • Dip a clean cloth, drain it and wrap the dough with it. Let stand in a clean bowl for 30 minutes at room temperature.
  • Form with the dough a cylinder about 3 inches in diameter. Cut the dough into slices with a knife about an inch wide.
  • Sprinkle flour on a clean flat surface and spread each piece of dough with a rolling pin. Sprinkle flour on each dumpling  to prevent sticking.
  • Wash the leeks, chop them  and set aside.
  • In a bowl add the mince, the ginger, the leek, 2 tablespoons of oil, salt and the soy sauce. Mix the ingredients well and fill with the mixture the dumplings.
  • Fill a large pot of water and place it over high heat. When boiling, add the dumplings one by one with care and cook until the water boils again. When the dumplings begin to float, reduce heat to medium and cook for 7 minutes. Remove the dumplings with a slotted spoon and serve immediately.

SIDE DISHES: This dish is usually served with a sauce made ​​from soy and rice vinegar.
It also can be accompanied by sour sauce.


TIPS: You can use ground ginger instead of fresh ginger.
PREPARATION TIME: 1 hour.
